Whether you love beets or dislike them, you should give this recipe a shot. I have people in my house that are not beet fans that love this recipe. Something with the balsamic vinegar baked into the beets gives them such an addicting flavor, it will very likely become a favorite side dish in your home.
- 1 large bunch of beets or 2 small bunches
- 2 Tbsp balsamic vinegar
- 2 Tbsp avocado oil or coconut oil
- Herbamare or Sea Salt
- Italian Herbs optional
Preheat oven to 375 degrees. Scrub and wash beets. Chop up into wedges and toss with vinegar, oil and seasoning. Bake for 1 hour. Serve alone or on a salad. Easy as it comes!
