This is my Grandma Jackie’s casein free buttercream frosting recipe and it is delicious. You can add any of your own natural food coloring to it and if you need ideas check out the natural food coloring post here.
Recipe is for 12 cupcakes if spreading it with a knife. If you want to pipe it then make another 1/2 of recipe for 12 cupcakes.
- 1/2 cup ghee
- 2 1/2 – 3 cups powdered sugar
- 2 -4 TBSP coconut milk – add until you have consistency you want
- pinch of sea salt
- 1 tsp of vanilla or almond extract
Let ghee warm to room temperature and then beat the ghee until fluffy. Beat in the sea salt and vanilla or almond. Add powdered sugar, start with 2 1/2 cups and then add 2 TBSP coconut milk and then keep for adding sugar and coconut milk for desired consistency and keep beating until smooth.
To color the frosting in these raspberry cupcakes below, we used freeze dried raspberries and crushed them into a powder and added it to the recipe above.
