I love peach season and look forward to it every year! We got invited yesturday to come pick peaches off of our neighbors tree. These may be the sweetest peaches I have ever had, thanks Jay. There were so many that needed to be eaten soon so they didn’t go bad so we washed and cut a bunch of them up and froze some and then decided to make some pie! We luckily already had some frozen gluten free pie crusts in the freezer that my mom had bought last year. They were so easy to make and we just used a few ingredients.
- 8 to 10 peaches cut up into slices
- 2 gluten free pie crusts – We used Wholly Gluten FREE 9″ pie shells.
- 1 cup almond flour
- 1 TBSP brown sugar
- 1 TBSP coconut oil melted
Unthaw pie crusts for 10 minutes. Preheat oven to 375°F. Remove protective sheet from shells before preparing, prick pie shell sides and bottom with a fork. Bake unfilled for 8-10 minutes.
While baking the crusts wash and slice up your peaches. In a small pot, warm up the coconut oil just until it is melted. In a bowl mix almond flour, brown sugar and melted coconut oil and mix and mash until there aren’t any hard lumps of flour or sugar. Add the coconut oil, mixing up the topping really well. Layer the peaches inside pie crusts, layering until they reach the top.and then sprinkle and layer over the top of the peaches. Bake for 30 minutes, let cool and enjoy. Optional add some dairy free vanilla ice cream or dairy free whipped cream.
