This Almond Breaded Zucchini is our favorite right now. Super fast and easy too! The girls even love it for breakfast with eggs.
2 small or 1 large Zucchini
1/4 cup Flour
1 TBSP Coconut Oil
Sea Salt and Pepper
Cut up zucchini in half long ways and then quarters and then dice into pieces. Heat skillet on med. add coconut oil and melt. Add zucchini and coat oil then add almond flour spreading it over the whole skillet. Saute until brown on each side.
