This Quinoa Cashew Butter Stew reminds me of a African soup I had one time that had peanut butter in it. This turned out really good, it has a bit of a sweet taste.
4 Cups Vegetable Broth
1/2 cup cashew butter
1 Yam diced
1 fresh jalapeno diced
1 Can Black Eyed Peas
1 Can White Beans
1 Can Kidney Beans or Black Beans
1 tsp Cinnamon
1 1/2 tsp curry powder
Salt and Pepper
1 Cup Quinoa
Put all ingredients except quinoa in a crock pot and cook on low for 5-6 hours. Stir occasionally breaking up cashew butter or before you put it in soften in container in hot water. Cook Quinoa in pot with 2 cups of water for 15 minutes or until water is absorbed. Add to soup in last hour. You can cook the Quinoa in the crock pot all day but sometimes it soaks up all the water and starts to stick.
