This is modified from a recipe I got on line a long time ago. It has a creamy texture with the quinoa in the crockpot.
1 cup Quinoa
4 cups Vegetable Broth or Chicken Broth
1 TBSP coconut oil or type of oil
1/4 cup white wine or 1 Tbsp white wine vinegar
1 yam diced
2 carrots diced
1 zucchini diced
1 tsp thyme
1 tsp salt
1/4 tsp turmeric
1/4 tsp sage
2 cups water
Throw everything in crockpot and cook on low 5-6 hours. Or cook everything in pot on stove until vegetables are tender and quinoa is cooked estimated 25-30 min. on simmer.
