I love making crockpot soups when the weather is cold and this Fall Vegetarian Chili is delicious. It turned out good and was different. I think some squash would have been really good in it too.
1/2 cup coconut milk
2 1/2 cups vegetable broth
2 TBSP Tomato Paste
1 TBSP Chili Powder
3/4 TBSP Cumin
1 tsp Oregano
1 tsp Coriander
1 Onion diced
1 Yam cubed
2 Carrots diced
1 Zucchini diced
1/4 Jalapeno diced
1 Can Kidney Beans
1 Can Navy Beans
1 Can Black Beans
1 Can Great Northern Beans
Throw everything in the crock pot and cook on low for 6-8 hours or cook in a large pot until vegetables are soft.
