This Summer Garden Casserole is perfect to make when you are up to your ears with zucchini, yellow squash and tomatoes in the garden.
1 lb Grass Fed ground beef
1/2 white onion chopped
2 garlic cloves, minced
2 med-lrg zucchini or a couple small
1 med-lrg yellow squash or a couple small
4 fresh tomatoes chopped
1/4 – 1/2 fresh jalapeno chopped
2 sprigs fresh oregano leaves only chopped
Herbamare to taste
1/2 tsp cumin
1/2 tsp chili powder
1 cup chicken or beef stock
Preheat oven 350 degrees. Chop everything up and mix in casserole dish. Put it in the oven for 1 hr.
