The first time I made fennel I thought well I probably will be the only one eating this tonight. Very pleasantly surprised the both Jeff and Keely loved it. We ended up letting Keely eat most of it because she liked it so much. Now I make it once every 2 weeks.. One variation that is really good is to use orange juice in place of the lemon, this however makes it not Body Ecology legal.
2 fennel bulbs
Herbamare or Celtic Sea Salt
1/2 small lemon juice
Ghee or Coconut Oil
fresh herbs optional(basil, oregano)
Trim and thickly slice the fennel bulbs. Place in baking dish or frying pan and add lemon, oil and seasoning. Bake at 350 degrees for 30-40 min or until tender or stir fry until tender.
