Buckwheat is one of the few grains allowed on the Body Ecology diet. It is actually a fruit seed that is high in protein and fiber and are gluten free. They are rich in vitamins and minerals averaging per cup of cooked groats 12 mg calcium, 86 mg magnesium, 148 mg potassium, 1 mg zinc also rich in niacin and cholrine. They can help rid body of extra cholesterol. Buckwheat groats are the hulled grains of buckwheat. We had stayed away from it previously because Keely had a slight sensitivity to it but since retesting we found it is safe. We made a delicious hearty cereal this morning after soaking the buckwheat groats over night.
