1 cup amaranth flour
1/2 cup arrowroot
1/2 cup ground pecans
1/8 cup flax seed
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 TBSP lemon juice
2 TBSP oil
2 TBSP Honey
1 – 1/4 cup water (add and stir until reach desired consistency)
In large bowl mix all dry ingredients first, then add liquids. Mix well.
Heat lightly oil pan on medium. Drop batter by 1/4 cups. Brown on both sides. Really good with coconut oil and elderberry syrup or a nut butter with raspberry preserves.
