Refreshing Lime, Watermelon and Mint Salad

It is hot out there, 98 to 104 degrees to be exact for the last 3 weeks.  This is a very refreshing and cooling snack or breakfast and only takes a second to make.  My youngest doesn’t like the lime on hers so I make her a bowl separate and cut the lime on the side.  We always eat our melons away from other meals and foods so we eat this first thing in the morning as a light breakfast or a snack on an empty stomach and wait at least 30 minutes if we eat something else.

  • 1/2 watermelon
  • 1 lime
  • 6 fresh mint leaves

Cut up watermelon into cubes and put in large bowl.  Wash and chop up fresh mint to desired size.  Squeeze lime over watermelon and mint and mix together gently. Chill in fridge or serve immediately.
