Gluten and Dairy Free Fried Rice

  • 1 tablespoon coconut oil
  • Sea Salt, to taste
  • Pepper, to taste
  • 1 garlic clove diced
  • 3 eggs beaten
  • 1 cup onions, diced
  • 1/4 cup carrots, diced
  • 1/4 cup peas
  • 1 cup cooked Basmati or white rice uncooked
  • 2 tablespoons organic tamari
  • 2 tablespoons sesame seeds
  1. Cook your rice in pressure cooker or rice cooker.
  2. Add the coconut oil to a skillet and set over medium heat. Add the eggs with salt and pepper and scramble. Add the garlic, onions, peas and carrots.
  3. Add the rice, tamari and sesame seeds to the pan and cook for 1 more minute if rice was already hot, if not cook until rice is hot and serve hot.
