Veggie Thai Stir Fry

You are going to love this Veggie Thai Stir Fry.  This  is so fast, easy and healthy.  We put this over quinoa, wild rice or millet. Or if adding chicken then we omit the grains to keep it Body Ecology friendly with the food combining.

1 bunch Bok Choy chopped
1 Yellow Pepper sliced
Snow Peas, big handful
1 Onion sliced
Raw Pumpkin Seed, handful
Basil, hand full of leaves
Mint, handful of leaves
1/8 cup Coconut Aminos
1/8 cup coconut oil or hemp oil
2 TBSP fresh lemon juice
Herbamare

In a hot skillet or wok add coconut aminos, oil, lemon juice and raw pumpkin seeds, stir for a minute then add all vegetables.  Stir fry until desired tenderness of vegetable and add herbamare.  If doing it over quinoa, cook 1 cup of quinoa to 2 cups water for 15 min. or for other grains follow directions for each.  If we add chicken then we skip the grains!
