Butternut Squash Fries

Butternut Squash Fries are the perfect substitute for fries if you are following a diet that doesn’t allow potatoes for one reason or another.   No complaints from my daughter, she loves them and I think they taste better.  They are a much healthier alternative to regular fries and are Body Ecology, GAPS and Paleo friendly!

1 Whole Butternut Squash
Coconut Oil
Celtic Sea Salt

Preheat oven to 375 degrees. Peel the butternut or I usually take a sharp knife and cut the skin off.  Cut up squash into the shape of fries, put in glass casserole and toss in coconut oil and sprinkle with sea salt. Bake 30 to 40 minutes varies on thickness of slices.  If only giving to kids I will make split them up into 3-4 servings and only cook one at a time since it doesn’t keep as well cooked.  I ziploc the other servings and use them within the week with other meals.
