Fennel Almond Crusted Chicken

This is a healthy baked chicken to replace any cravings for a shake and bake or fried chicken and it tastes much better.

1 lb organic free range boneless skinless chicken breast
1 fennel bulb
1/2 onion
1 green apple
1 Tbsp fresh chopped sage
1 Tbsp fresh chopped thyme
1 cup raw almonds soaked overnight
2 Tbsp coconut oil melted
Herbamare or Celtic Sea Salt

Preheat oven to 425 degrees.  In a food processor pulse almonds, fennel, apple, thyme, sage, onion and herbamare until looks crumby.  Spread out on a baking sheet and crisp about 5 minutes.  Roll chicken in mixture and spread all over.  Bake for 20 minutes, if mixture gets too dark cover with tin foil lightly.
