Baked Beets, Kohlrabi and Fennel

Great variation to the typical baked beets with added kohlrabi and fennel.

  • 3 Beets peeled and chopped in slices or cubes
  • 1 Kohlrabi peeled and chopped in slices or cubes
  • 1 Fennel Bulb cleaned and sliced
  • 2-3 TBS coconut oil
  • Herbamare to taste and any other herbs you want to add
Mix all together and bake at 350 degrees for 1 hour.  Serve with sauteed greens or a dark green leafy salad and a side of quinoa or millet.
