Mashed Butternut and Potatoes

The original recipe is here Butternut Potato Mash and below is my version.  I like to simplify recipes as much as possible, one because I have a 3 yr old who isn’t a fan of a bunch of stuff mixed together and two because I like easy simple recipes I can throw together fast.  They are really good, filling and are great leftovers for breakfast.  We had them with organic corn on the cob and a butter leaf lettuce and cucumber salad.

1 butternut squash peeled and chopped and baked
6 red potatoes chopped and boiled
3 tsp extra virgin coconut oil
Herbamare or celtic sea salt to taste
Pepper to taste

Bake squash in a little water covered at 400 degrees for 40 min.  Boil Potatoes about 30 min until tender.  Mash and add oil and seasoning.
