Mexican Quinoa Soup

This Mexican Quinoa Soup is hearty, delicious and Body Ecology friendly.

  • 1 zucchini diced
  • 2 carrots diced
  • 1 anaheim pepper diced
  • 3 Red Potatoes
  • 1 cup soaked Quinoa
  • 4 cups vegetable broth
  • 1 cup water
  • 1 tsp cumin
  • 3/4 tsp corriander
  • 1/2 tsp herbamare or celtic sea salt

Bring to boil and then simmer 35 min.  Top with Avocado slices, lime juice and herbamare.
