Cultured Lemons

By culturing lemons you get a big boost in the vitamin C content and a great amount of healthy probiotics!

  • 8 organic lemons, if Meyer Lemons are available those taste the best
  • 2 TBSP Sea Salt
  • Purified Water
  • 2 tablespoons apple cider vinegar
  • 1/4 packet Culture Starter
  • 3 tsp organic sugar

Soak lemons in water with a little apple cider vinegar to clean.  I like to find the thinner skinned lemons since you will be leaving on the skin.  In the clean sterilized jar add 1/2 cup purified water and 1/8 cup hot purified water, add in your culture starter and ecobloom or use sugar to wake up the starter.  Set aside.  Rinse the lemons and you can either cut them in four wedges or slice them in circles, I did a little of both.  Take a couple and put them in the culture water and mash with a potato masher to make a lemon juice brine and add Apple Cider Vinegar.  Add 2 TBSP sea salt depending on your taste, you can add more or less if you would like.  Then add all the lemons in and compress lightly with your fist and add purified water to cover over the top of the lemons.  Close jar and let sit on your counter for about 2 weeks depending on the temperature.   When done put in refrigerator.  Should keep for up to 8 mths.
