Cultured Yellow, Orange and Red Peppers

Feeling very motivated today to make some new batches of cultured vegetables. With all the fall colors and the beautiful weather when I was at the store and saw all these colorful peppers I felt inspired to try them out with a new culturing experiment.  You have to give these Cultured Yellow, Orange and Red Peppers a try!

  • 1 yellow pepper
  • 1 orange pepper
  • 1 red pepper
  • 1 white onion
  • 1 clove garlic
  • 1/2 Tbsp sea salt
  • 1/2 culture starter packet
  • 1 scoop ecobloom or organic sugar
  • water

In a small bowl mix culture starter, ecobloom and 1/2  cup warm purified water and set aside to let the culture wake up.  You can use sugar in place of ecobloom and really you can ferment the vegetables with just the salt if you want to.  Cut everything up in slices.  I layered mine with onion on the bottom, orange pepper, yellow pepper, red pepper, garlic on top.  Pour in the culture starter mix then fill the rest of jar with water and add salt.  Set on counter for 2-3 days and then store in your refrigerator for up to 8 mths.
