Chicken Bone Broth Recipe

Here is our favorite Chicken Bone Broth Recipe I use below and I also save up the ends of veggies like celery or fennel rather than throw them away I put them in the broth.  I grab a lot of herbs in the garden a different mix usually each time.  You can throw in any veggies or herbs you want to.  Kombu is a great addition and it has lots of micronutrients.  The vinegar or lemon juice helps pull more minerals out of the bone.  I heat up a couple cups of it either every morning or with dinner and we drink it in a mug with a little sea salt or herbamare.  Read about the benefits of bone broth here: Bone Broth Benefits

3 lbs Chicken pieces with bone
2 Tbsp apple cider vinegar or lemon juice
1 piece kombu
1 piece kelp
3 large carrots
1 onion
All the herbs you can find in your garden
Thyme, Rosemary, Oregano, Basil, Sage
Dark Leafy Greens, a couple handfuls
Any veggies you have in your fridge that you need to use up

Hack the bones so you are exposing the bone marrow.  I use a big crazy knife I got at an Asian market to cut into coconuts.  Place the chicken and everything into a big pot and cover with water.  Bring to a boil and then lower the heat to low and gently simmer for 3-4 hours.  You can skim any impurities off the top as they rise if you want.  Strain broth into a glass container to store in the fridge.  I usually will take a little of the broth and put it back in the pot and shred some chicken and veggies and we will eat the soup that night.  After the broth cools it will be a jello like consistency because of all the great collagen in it.
