Kombu

Sauteed Kombu and Carrots

Kombu is a nutritional powerhouse from the sea.  It is high in Iodine, Calcium, vitamin A, C to name a few and it has the ability to make beans more digestible and actually tastes amazing.

5 strips of Kombu (soaked)
Coconut oil for pan
1 Onion, chopped
3 Large Carrots Shredded
1 T freshly grated ginger
Coconut oil to taste
½ cup chia seeds
1 TBSP Herbamare or Sea Salt

Rinse then soak seaweed in cold water for 15-20 minutes. Cut the softened kombu into thin strips.
Sauté onion in oil. Add kombu and sauté for 2-3 minutes. Add carrots, ginger and ¼ – ½ cup water. Cover and simmer 150-20 minutes.  Add coconut oil to taste,  ½ cup chia seeds and Herbamare.
