Shepard’s Pie, SCD

I used to make a really good vegetarian shepards pie but it had mashed potatoes and kidney beans and both are illegal on SCD.  I made this last night and it turned out really good.  The cauliflower mashed potatoes are so good and you would never know it wasn’t the real thing.

For the Mashed Cauliflower

1 1/2 Cauliflower Heads
1 TBSP Coconut Oil
Herbamare or Salt to taste
Pepper to taste

Steam until tender and put in food processor with Coconut Oil, Herbamare or Salt and pepper. Process until desired consistency.  May need to add a little of the steamed water.

1 cup chopped green beans
1 cup fresh or frozen peas
1 cup shredded carrots
1/2 chopped onion
1 zuchinni chopped
1/2 lb organic ground beef (optional)
2 cups Vegetable Broth
Herbamare to taste
Pepper
1/2 tsp Thyme
1/2 tsp Rosemary

Stir fry everything in pan with vegetable broth and spices, then cover and simmer 20 min. Put in Casserole dish, cover with mashed cauliflower and bake for 5-10 min. at 350 degrees or make ahead of time put in fridge and then heat in oven at 350 degrees for 40 min. or until middle is hot.
