Healthy, Easy Ramen Noodle Soup GF/Vegan

I woke up this morning not feeling the best, my throat was scratchy  and I had a little fever.  All the smoke from all the fires probably isn’t helping.   The only thing that sounded good to me was soup so my mom and I put this together and it was terrific!

  • Organic Imagine Ramen Noodle Broth
  • Lotus Foods Rice Ramen Noodles – 2- 3 blocks depending on how many noodles you want
  • 1/2 lemon squeezed
  • 1 cup frozen organic peas

Combination of Seaweeds crumbled up:

  • Dulse
  • Alaria
  • Kelp
  • Laver

Bring broth to a boil and add noodles, seaweeds, peas and squeeze juice of half lemon.  Simmer for 4 minutes or until noodles are tender.  We buy a 12 pack of the rice noodles at Costco.
