Mashed Butternut Squash and Cauliflower

If you are following a special diet with no potatoes, whether it is SCD, Gaps, Body Ecology (you can have red potatoes), Paleo or a Anti-candida diet you will not miss mashed potatoes with this recipe.  We often eat this mashed butternut squash and cauliflower alone with a side Kale salad and it is very filling and satisfying.

  • 1 large butternut squash
  • 1 large head cauliflower
  • 1 tbsp coconut oil
  • herbamare
  • Clove of garlic optional

Preheat oven to 350 degrees. Peel and chop butternut squash.  Wash cauliflower break it up and mix both in a big casserole glass dish.  Add coconut oil, peeled garlic clove and herbamare.  Place in oven and bake at 350 degrees for 1 hour.  After about 5 minutes in the oven or enough time to melt the coconut oil take it out and toss all the vegetables in the oil then return to the oven.  You can also melt the coconut oil before hand.  Cauliflower browns a bit but watch so it doesn’t burn, I make it bigger pieces than the butternut.  Take it out and put it all in a food processor and blend until smooth or desired consistency.
