Great variation to the typical baked beets with added kohlrabi and fennel.
- 3 Beets peeled and chopped in slices or cubes
- 1 Kohlrabi peeled and chopped in slices or cubes
- 1 Fennel Bulb cleaned and sliced
- 2-3 TBS coconut oil
- Herbamare to taste and any other herbs you want to add
Mix all together and bake at 350 degrees for 1 hour. Serve with sauteed greens or a dark green leafy salad and a side of quinoa or millet.
