I was excited to learn you could make milk out of quinoa, we are so limited right now with milks Keely can have. I used a kefir starter from Body Ecology.
- 2 cups raw quinoa (I buy the bags at Costco)
- 1 quart pure water
- pinch sea salt
- 1/4 cup coconut kefir, home-made kefir or strong probiotic powder.
- 1 tsp vanilla flavoring
- Raw Honey or Maple Syrup to Taste – Stevia if staying away from honey or maple syrup
- Cinnamon and Nutmeg on top optional
Soak your quinoa overnight in quart-sized glass jar on the counter. Rinse quinoa and add to blender with 1 quart pure water. Blend for 30 seconds. Drain quinoa pulp by using a nut-milk bag or strainer. Pour the liquid into a sterile glass jar and add 1/4 cup kefir or tbsp probiotic powder and seal jar. Make sure jar is sealed tight and clean. Set out on counter to culture, room temp is best at around 70-80 for 24 hours. If it is colder you may want to ferment longer. Add vanilla and stevia to taste, you could also add raw cacao powder to make a chocolate milk.
