This Mexican Quinoa Soup is hearty, delicious and Body Ecology friendly.
- 1 zucchini diced
- 2 carrots diced
- 1 anaheim pepper diced
- 3 Red Potatoes
- 1 cup soaked Quinoa
- 4 cups vegetable broth
- 1 cup water
- 1 tsp cumin
- 3/4 tsp corriander
- 1/2 tsp herbamare or celtic sea salt
Bring to boil and then simmer 35 min. Top with Avocado slices, lime juice and herbamare.
