Zucchini Fries

We made these with my Grandma Jackie yesterday.  Grandma Jackie went to Seattle and her brother Dave made her lot of delicious meals and zucchini fries were part of it.  She just had to make a little change to make them dairy free.  I have to tell you that they were so good I ate them all myself before my sister got any and so I need to make them again soon and a double batch because she was not happy with me♥

  • 2 medium sized organic zucchini
  • 1 cup gluten free bread crumbs
  • 1⁄2 cup dairy free Parmesan cheese
  • 1 egg
  • 1 tsp Himalayan salt

Directions:

Cut zucchini in half crosswise and then cut each half into eight pieces lengthwise.  Beat egg in bowl and add zucchini, tossing to coat. Mix bread crumbs and parmesan and dip each zucchini piece in mixture, coating thoroughly. Place on parchment paper lined cookie sheet, green skin side down. Bake at 400 degrees until browned and zucchini is tender. (This takes about 45 minutes) Dip into your favorite dipping sauce. My favorite is to just mix up organic catsup and Veganaise.

I like to save the ends of gluten free bread loaves in my freezer, then toast them up all at once and process into crumbs. Keep a bag in your freezer. You can also buy GF panko bread crumbs, but I thought these crumbs were a little coarse.
