Celery root which is also known as celeriac is like getting to eat a potato that tastes like a mellower celery. Since we are adventuring out into new territory with taking potatoes out of the diet this was a first for us and I was pleasantly surprised.
- 1 large Celery Root or 2 smaller peeled and diced
- 16 oz bag Baby Carrots
- 2 Tbsp Coconut Oil
- 1/2 tsp herbamare
- 2 tsp fresh rosemary
- 1/2 tsp thyme
- 1/2 tsp vanilla flavoring
Preheat Oven to 350 degrees. Melt coconut oil. Put all ingredients in a casserole dish and mix well. Cook covered for 45 min. then uncover and cook for another 15 min.
