Millet Muffins

I put this recipe together this morning to go with our soup tonight, there wasn’t one recipe that would work online, they all had too many ingredients that I would have had to substitute.  Keely was so excited to see me cooking muffins again she didn’t even care they weren’t sweet muffins.  She got her plat and fork ready before I even put them in the oven and waited in the kitchen until they were done.  I put a little hemp oil on one and she loved it!

1 1/2 cup millet flour
1 tsp baking soda
2 tsp Lakanato
2/3 cup hemp seed
1/3 cup palm oil or coconut oil
6 oz. butternut squash pureed (canned or fresh)
1 tsp plain gelatin
Add water little by little

Put either in muffin papers in muffin tin or grease the muffin tin.  Cook 20 min at 350 degrees, check with toothpick.
